I've always loved the Irish culture. Interestingly enough, clovers apparently aren't a big deal out there. I adore the Irish accent and I am always fascinated when watching River dancing. I do tend to wear green in the spirit of St. Patricks Day. What do you typically do for St. Patty's day?

Well, I'm Scottish-Irish, so while my dad inevitably always makes the joke that "Everyone is Irish on St. Paddy's, except for the Scottish. We're still Scottish" we've always had corned beef and cabbage for dinner that night. Even now that I'm older, I've carried on that tradition with roommates and friends over the years. This year, I have some friends coming into town to visit so we'll be going out in DC for some Guinness and green beers.

I love corned beef and cabbage! I haven't been consistent over the years but I certainly wouldn't mind making it tradition to have every St. Patrick's day. Absinthe, How do you typically prepare yours? I've used the crockpot for times that I've made it for my family.

Sharon, my mom does hers in a crockpot. My (former)step-mom does hers slow-roasted in the oven. I use one of those electric roasters for half and a crockpot for the other half because I usually do two preparations. The crockpot one has a pint of Guinness and some additional seasonings that I've toyed with over the years whereas the roaster is a more traditional style that is much better for leftover sandwiches. The most important thing is that the meat is nice and tender and the potatoes, cabbage, and carrots just melt in your mouth.
